Cuverie

The first of our Champagnes, emblem of the house for more then 60 years.
Still elaborated from the three traditional grape varieties: Pinot noir, Meunier and Chardonnay, harvested in our premier cru vineyards of Chamery, Vrigny and Coulommes la Montagne.

Aged in the cellars for at least 48 months , the Perpetuel Range includes an important proportion of reserve wines made in the precedents harvests. They represent a true memory of our domain oenological history and helps us to constantly maintain the house style.

A “Perpetual Reserve” is an ageing and blending sistem in which we keep a substancial proportion of previous vintages changing just a part of it year after year. This method allow to perpetuate the caracteristics of older vintages in the new blendings to keep the style of the House.

Extra Brut

Blending: 

•40% Pinot Noir, 30% Pinot Meunier, 30% Chardonnay
•40% of reserve wines (perpetual blending) from the precedent harvest

Terroir: 

•Chamery, Vrigny and Coulommes-la-Montagne, the western part of the Montagne de Reims.
•Various type of soil: siliceous and calcareous sands, silty/clay soil on chalky subsoil, and calcareous clay soil with millstone fragments

Vinification: 

•Aging on lies of 9 month in stainless steel vats (85%) and oak barrels (15%)
•Malolactic fermentation is done

•Aging in bottle of 4 years minimum

Dosage: 2 to 4 g/l

Extra Brut Rosé

Blending:

  • 40% Pinot Noir, 35% Meunier, 25% Chardonnay
  • 5 à 10 % of our Chamery red still wine (pinot noir)
  • 30% of reserve wines (perpetual reserve of previous vintages)

Terroir: 

•Chamery, Vrigny and Coulommes-la-Montagne, the western part of the Montagne de Reims.
•Various type of soil: siliceous and calcareous sands, silty/clay soil on chalky subsoil, and calcareous clay soil with millstone fragments

Vinification:

•Aging on lies of 9 month in stainless steel vats (85%) and oak barrels (15%)
•Red still wine matured in 400L oak barrels
•Aging in bottle of 4 years minimum

Dosage : 3,5 g/l

Blending: 

•35% Pinot Noir, 35% Pinot Meunier, 30% Chardonnay
•40% of reserve wines (perpetual blending) from the precedent harvest

•Various type of soil: siliceous and calcareous sands, silty/clay soil on chalky subsoil, and calcareous clay soil with millstone fragments
