Elaborated on the best vintages, this wine is a tribute to our elder Jules Bonnet, and his work as a winemaker.

Our best Pinots Noirs are selected for a vinification in small oak casks, under the action of the natural yeast of the terroir. After the fermentation, the wine is grown 9 months in the barrels with few stirring of the lees. Bottled without filtration,

The most generous variation of Jules Bonnet’s style, a cunchy touch and Morello cherry of the Pinots Noirs from Chamery soften the power of the harvest 2014. You’ll have a great pairing with a serrano ham like a “pata negra”.

  • Verzenay Grand Cru: Presence of chalk at a very shallow level, northern orientation of the slope; these conditions ensures complete ripeness and high acidity level, giving long aging potential and structure to the wines.
  • And 2 plots classified Premier Cru

Vinification :

  • Rosé of blending (7% of red wine coteau champenois)
  • First Fermentation and aging done entirely in oak barrels (previously used 4 to 10 times), with regular stirring of the lies until the bottling in May.
  • Minimal aging in bottle of 4/5 years

  • Extra-brut, 0 to 3 g/l
