An Extra ``brut`` expression of our terroirs

 

Still elaborated with equals parts of Pinot Noir, Meunier and Chardonnay, harvested in our premier cru vineyards of Chamery, Vrigny and Coulommes la Montagne.

Aged for 48 months in the cellars, the Extra Brut includes an important proportion of reserve wines made in the precedents harvests. They represent a true memory of our domain oenological history and helps us to constantly maintain the house style.

Vineyard in conversion to organic, no synthesis chemicals used protection against mildew and oidium with copper salt and sulfate. Preservation of the life of the soils, superficial plowing under the row, natural growth of the vegetation in the row.

Full bodied and aromatically intense, our signature cuvee draws its identity from the calcareous clay and sandy terroirs of the “petite montagne”.

 

Cépages: 

  • 40% Pinot Noir, 30% Chardonnay, 30% Meunier
  • 40% of reserve wines (perpetual blending) from the previous harvests

Origine / Terroir:

  • The assemblage involves about 35 vine plots over the villages
    of Chamery, Vrigny and Coulommes-la-Montagne, in the
    western part of the Montagne de Reims.
  • Various type of soil: siliceous and calcareous sands, silty/clay soil on chalky subsoil, and calcareous clay soil with millstone
  • Age average of the vines : 35 years old

Vinification/élevage:

  • Aging on lies of 8 months before blending with the reserve wine. First fermentation done in inox tank (85%) and oak barrel (15%)
  • Minimum aging in bottle of 4 years

Dosage:

  • Dosage extra-brut, 3 to 4 g/l, traditional liqueur
